During our Stay in Four seasons we had the exclusive opportunity to experience the “Big 5”! The complete culinary team at Four Seasons Resort Koh Samui, led by Executive Chef Renato Rizzi united for a gastronomic journey traversing Thailand, Italy, Portugal and China at the 10 Hands & Castello Banfi wine dinner.
We started the night at Koh Bar, where we were offered an ultra-refreshing welcome drinks of fresh juice served in hand crafted glass and straw made from the natural bamboo (how spectacular) siting into the huge sofa and then enjoying the fresh island breezes with a pre-dinner selection of wine with succulent canapé.
Promising an exclusive experience, the dinner was set up in Koh Thai Kitchen. The restaurant which specializes in authentic Thai food is perched on a palm-fringed hilltop when you can enjoy a cooling evening breeze. The objective of this dinner was to highlights the flair and talent of each of the chefs of Four Seasons Koh Samui restaurants, as Guillaume Blanchard and Rodolfo Maralli from Banfi, unveiled the fruity, spicy and robust notes that pair with the plates of art.
The food was fabulous. First Executive Sous Chef, Khun Sumalee Khunpet offered us a taste of Thailand with a Thai-style ahi tuna tartar paired with a chardonnay, pinot grigio. Then Li Chao Yang’s, the Chinese Sous Chef prepared a “guo tie” a homemade dim sum, with wagyu beef and foie gras, while we tried the Banfi Col Di Sasso a angiovese, cabernet sauvignon.
The third course was a succulent wild mushroom risotto crunchy/crispy on the outside and soft/chewy on the inside, paired with Banfi Bolgheri ASKA, a cabernet sauvignon. Followed by an amazing Galician rib-eye from Ivo Benidio, the Portuguese Chef de Cuisine, complemented by a Brunello di Montalcino wine. Last but not least, the desert, called “passion for chocolate” from Four Seasons Samui Pastry Chef, Khun Piyaporn Tinrach, ended the evening with a fruit sparkling white wine, Banfi Spumante Tener.
Four Seasons is second to none when it comes to The Ideally Romantic Destination Dining Experiences. By taking part of this special night, once again we were not disappointed. What could be a better way to start our stay at Four Season Samui than enjoying amazingly crafted food paired with Italian wine, enjoying the view of coconut trees forest and listening to the sounds of the waves coming from the beach. We won’t forget that night!
